Mediterranean towers

The small eye-catcher on a buffet

 

Ingredients for 20:
  • 1 packet of Abbelen mini meatballs (contents approx. 20)
  • 1 large aubergine
  • 3-5 tomatoes
  • 2-3 mozzarella
  • ˝ bunch of basil
  • 20 black olives without stones
  • 20 toothpicks

Preparation:
Cut the aubergines into slices 1 cm thick. Salt, pepper and allow to stand for 5 minutes. Then dry the aubergine slices and fry then light brown in olive oil on both sides. Allow the slices to dry off on a kitchen towel. Use one mini meatball as a basis for each "tower". Place one slice of aubergine, one slice of tomato with a basil leaf and, to finish, a slice of mozzarella on them. The towers are briefly grilled in the oven until the cheese melts.
Finally fix a black olive
on them with a
toothpick.

  • You can use caper berries instead of olives.
