Turkey Escalopes with mushroom and parsley ragout

The favourite meal for mushroom fans 

 

Ingredients for 2 people:
  • 1 packet of Abbelen turkey escalopes (contents: 2)
  • 250 g of mushrooms
  • 1 bunch of smooth parsley
  • 1 onion
  • 200 ml cream
  • Lemon juice
  • Butter for frying
  • Some pink pepper (crushed)

Preparation:
Finely dice the onions and fry them in butter. Put the sliced mushrooms into the pan and cook them until the liquid has evaporated. Then add the cream and boil down until the required consistency has been achieved. Add plenty of chopped parsley and add salt, pepper and a dash of lemon juice to taste. Decorate with crushed pink pepper and serve with tagliatelle.

  • So-called "pink pepper" is actually not part of the botanical "pepper family" but  belongs to the Aralia family, which also includes pistachios and mangoes. This is the fruit of the pepper tree (Schinus Terebinthifolius).
